Open Egg Sandy

Ingredients:
6 Hard Boiled Eggs (Minus 2 yolks for a more mild flavour)
3/4 Diced Celery
1/4 cup Low fat Mayonnaise (Greek Yoghurt or Perinnaise are also great!)
1 Tsp Dijon Mustard
Chives
Salt and Pepper to Taste
Method:
Combine all ingredients in a bowl and mix well.
Serve on toasted Ciabatta, sour dough or preferred bread with mixed leaves and tomatoes and sprinkle with some extra chives.
