Gnocchi, Chicken and Veggie Bake

Ingredients
500g Store Bought Gnocchi
1 Chicken Breast, Cut in 1cm cubes
1 Small Leek
2-3 cloves garlic, crushed
1 Tbsp Olive oil
250g Sweet Potato, peeled, cut in 1cm cubes
1 carrot, cut into 1cm, cubes
1/2 Zucchini, cut into 1cm cubes
1/2 bunch broccolini or broccoli
1/2 cup tasty cheese
300ml Pouring cream
Handful of fresh Basil Leaves, torn
Salt and Pepper to taste
1/4 cup of Parmesan cheese
Method
Preheat oven at 180c.
Heat oil in a medium frypan. Add leek and garlic and cook over medium heat until leek has softened, stirring occasionally. Add chicken and cook until browned then add the sweet potato and cook until starting to soften.
Add cream, carrot, zucchini, cheese, basil and salt and pepper. Simmer for about 10 minutes, stirring regularly.
Place uncooked gnocchi in a 25x40cm baking dish. Pour in cream mixture over the gnocchi. Place small florets of broccolini on top of the mix then sprinkle with parmesan cheese.
Bake in oven for 20 minutes or until the cheese is golden.
